This was something a bit new for me, I’ve cooked salmon many times before but thought I’d experiment with a semi-sweet glaze and it was lovely (if I do say so myself)! I also found out that salmon is good for your teeth, all the more reasons to try it right ;)
- 250g asparagus
- 310g salmon fillet
- Maple syrup 2 floz
- Balsamic vinegar 1tsp
- Soy sauce 4tsp
- Maille Dijon mustard 1tsp
- 70g edamame/soy beans
- handful of baby kale leaves
Mix the syrup, vinegar, soy and mustard well to make your glaze and set aside.
Score the surface of the salmon, as it’s not being marinated I find it helps the flavour get all the way through!
I chopped the base of the asparagus off, and split them down the middle so I could lay it flat(ish) around the salmon.
Pour the glaze over the salmon and asparagus and cook in the centre of the oven at 200 degrees for at least 15 mins (until the fish flakes or it is as well done as you like).
Serve with rice and salad! Drizzle the remaining glaze over plated food as well!
